Crafted from the best Cabernet Sauvignon available to the Yering Station winemaking team, traditional old world vinification techniques are employed to infuse character and enhance the final Cuvée, an extended term of macerations on skins achieves a rich structural density, extracting a judicious amount of tannin to ensure a palate of suppleness. Yering Station are advantaged by the eldest and most auspicious vineyards, one of a few select Victorian winemakers who are sufficiently practiced to orchestrate a pure Yarra Valley Cabernet Sauvignon.

Shiraz Viognier is an obsession which consumes the Yering Station team, as they continue to enjoy and refine the artisanal process with each new vintage. Co-ferments of Viognier skins and Shiraz berries, hand picked off closely managed vines to the most opportune schedule, the careful extraction of aromatics, flavours and colour, make for a wonderfully perfumed, complex wine with velvet tannins and prolonged, engaging finish.

The flagship Pinot Noir by one of Australia's most eminent Pinot specialists, from the best parcels grown to the most precious blocks. The near perfect climes and terroir produce concentrated, intense Pinot Noir berries with profound articulation and remarkable structure. Tiny yields of less than 1½ tonnes to the acre translate into a pure and distinguished wine. As with all Yering Station's Reserves, an edition that's suitably rare and extremely limited, whatever the vintage, the first growth in Australian Pinot Noir.

Yarra Valley is internationally renowned for ultra fine Pinot Noir. The Yering Station team's particular passion for the variety is only matched by the specially trained vines great affinity to the region. The slightly undulating property is planted to some carefully tailored clonal selections. Foot stomping, boots on, is an ancient technique still employed for its uniquely gentle extraction of juices and flavour. The finishing touch to Yering Station's Pinot Noir is an extravagant maturation under the finest French oak foudres, a portion of which are always new.

Sourced exclusively off the unirrigated eight acre block, established 1973 at the western extremity of Yarra Yering. Cool climate new world Shiraz starts here. A high inclusion of stalks and whole bunches are added back to the traditional half tonne open tea chest fermenters to lend juiciness plus extra cut and persistent tannins to the sweeping finish. Basket pressed and aged eighteen months in a high proportion of new French oak. A slight westerly aspect and propitious clay soils yield a wine that's a perfect foil for the feminine Dry Red No.2

Inspired by the complex and eclectic diversity of noble French styles, intriguingly binding two distinct genres from Burgundy and the Valley Rhone, all done in a very Yarra Valley way. Dry Red No.3 is an elegant accord of hand selected fruit, picked off the 1981 Pinot paddock and 1995 Waterloo block. Half the Cuvée is Shiraz, treated to a whole bunch vinification and interrupted by a laborious destemming until completion of ferments. Components are filled to French oak barriques for nine months of age before assemblage into the final wine.

Yarra Yering are profound, intelligently made wines. Dry Red No.3 is crafted to the timeless and enduring recipe of flamboyant Portuguese varietals, traditionally foot stomped and aged in a perpetual endownment of well seasoned oak. Hand picked parcels of Touriga Naçional, Tinta Cao, Tinta Amarela and Roriz, Alvarelhao and Sousao, are destemmed into a field blend, retaining as many whole berries as possible. Defined by its integration, elegance and depth, articulating the excellence of terroir and artisanal winemaking at the Yarra Valley hamlet of Gruyere.

Inspired by the complex and eclectic styles, famously originating from the Shiraz grape's spiritual home within the diverse appellations of Vallee Rhone. In true stylistic authenticity, Mourvedre, Viognier and Marsanne add a further element of intrigue. Complex and traditional winemaking methods are employed to craft this most extraordinary, some would say most eccentric of Yarra Valley reds. The internationally renowned Dry Red No.2 is perpetually fine tuned as the team adjust the proportions of fruit to the performance of vintage.

Yarra Yering's Dry Reds are national flagships, based around complex varietal blends. Assigning the mercurial cepage of grapes a unique bin number, has liberated the winemaker to modify the mix as styles evolve. No.2 Dry Red is a perfumed, mostly Shiraz wine, rich and generous, co fermented with inclusions of Mourvedre, Viognier and Marsanne for vibrancy, suppleness and an extra dimension to the range of expression. Feminine and seductive, beguiling yet elegant, with long, lingering impressions of violets and eucalypt, cherries and spiced plum.

The classic Claret style, five decades of the most memorable editions, new world classics offering the greatest finesse, profound richness of fruit and impeccable structure. After a few years of trials and tribulations to achieve the ultimate construct, Dr. Carrodus settled on a mostly Shiraz Cuvee with judicious inclusions of Mataro, Viognier and Marsanne.

Excellent Langton's Classification. The timeless Claret style of red wine, this is the bespoke blend on which Yarra Yering's reputation was built and continues to endure. Almost deceptively, they drink well in their youth, yet are known to evolve for decades. Half Cabernet, a fifth of Merlot, the balance in Malbec and Petit Verdot, all harvested off the original 1969 unirrigated estate plantings at Gruyere in Yarra Valley. Beautifully balanced and integrated, the fruit of an iconic vineyard, such delicacy within a sleeping powerhouse of precision.

Agincourt is one of the more sheltered blocks at Yarra Yering, vines were established circa 1990 and yield the finest harvests of Malbec anywhere in the nation. Mostly Cabernet Sauvignon with a quarter of the gentle Malbec, grapes are all hand picked, crushed and destemmed into good old fashioned, half tonne open top fermenters, manually plunged twice daily and treated to extended time on skins for a softening of tannins. Batches are delicately basket pressed into seasoned French oak barriques for malolactic and twenty months maturation.

With its heart in the Yarra Valley, Yarra Ridge stands as one of Australia's premier producers of cool climate wines. Over the past two decades, Yarra Ridge has emerged as a regional icon, producing exceptional wines and maintaining a reputation for energy and innovation. The winemaking team are passionate and innovative, the viticulturalists are skillful and work the vines to the most exacting standards. A superb Yarra Valley Shiraz with exciting peppery fruit characters, to enjoy with grilled beef and gourmet charcouterie.

The Yarra Ridge team have captured the distinct expression of Yarra Valley Pinot Noir. Upper Valley fruit, known for it's aromaticness and delicacy, has been combined with components of richer and riper grapes picked off vineyards lower down the valley floor at close proximities to the Yarra Ridge wineworks. The emphasis here is on ageing in seasoned French oak to enhance the fruit, showcasing the velvety nature and sublime cherry, barnyard and rhubarb characters of truly satisfying and memorable Yarra Valley Pinot Noir.

A Cabernet Sauvignon with elegance, concentration and finesse. Yarra Ridge has made the most of the best fruit which the Yarra Valley can produce, treating the wine to the most exacting standards of vinification, followed by a lengthy maturation under the finest selection of oaks.

Elegance and finesse are the signature of Yarra Burn, their distinguished releases are the reward of consistently superior viticulture and uncompromising skill in the vinification. The essence of these qualities is captured in this classic wine, stylistically similar to the famous siblings of France's Rhône Valley. A five percent dash of the sweetly aromatic Viognier, softens and adds figure to the components of mighty Heathcote and Coldstream Shiraz. A gently perfumed wine exhibiting characters of apricot, violet and strawberry, it drinks beautifully upon release.

Good Pinot Noir tends to be outrageously expensive, but De Bortoli are well endowed with some of the finest vineyards in Yarra Valley to make a splendid young wine. Harvests from the estate properties at Dixons Creek, Tarrawarra and Yarra Glen, are assembled with parcels of Upper Yarra fruit. Minimal handling, whole bunch ferments and an itinerary of handling techniques borrowed from the old world, define the style and preserve the pinosity. Windy Peak is plump on the palate, with good varietal character, pleasantly aromatic and extremely food friendly.

Over the years Windy Peak have consistently out performed many pricier labels through sheer quality and value, by virtue of cutting edge viticulture and flair in the art of vinification. Having assembled parcels of the finest Yarra Valley fruit around a backbone of Tarra Warra Merlot and Dixon's Creek Cabernet, the De Bortoli winemaking team have come up with another winner. A plummy red wine with velvetine tannins and clean, polished finish, very easy to sip and savour as aperitif, innately suited to warming comfort food.

Heathcote is blessed by the richest, most ferrous terroirs in Australia. The deeply coloured Cambrian soils are heaven sent for Shiraz, having established Heathcote as one of the most distinctive red wine appellations in the world. De Bortoli excel at Shiraz and have long made it their business to retain those vineyards which can produce the finest fruit. Their award winning team have chosen sites on the red volcanic soils of northern Heathcote to construct a wine that's generous in flavour and velvety in texture, perfect for bringing out the best in good food.

Who better to craft luscious Yarra Valley Pinot Noir than one of Australia's leading chocolatiers? The passionately gastronomical Peter Wilson also spent ten years making wine at the illustrious Yarra Yering. He settled on a site of pristine natural endowments and fortuitous climes, a place which yields harvests of the most splendid Yarra Valley fruit. The viticulture here is completely holistic, achieving the quality of Pinot Noir which can articulate fully its provenance and sense of place. Match with crackling pork, your favourite duckling or côte de veau.

Wantirna Vineyard is a never ending journey of enchantment and surprise. Reg and Maryann Egan honed their practical skills amongst the small estates of Burgundy and Bordeaux. Vines are all dry farmed and the roots dig deep into the clay soils, searching for any available moisture. At times vigor and energy are needed, at times all that's required is patience. Established 1963, it was one of the first new generation Yarra Valley vineyards, the earliest plantings included an unclassified tally of arcane varietals and clones, many remain largely unknown.

The Egans spent many vintages amongst the first growths of Burgundy and Bordeaux, before establishing the illustrious vineyards at Wantirna. Inspired by the sublime excellence of Chateau Cheval Blanc, the Egans molly coddled a precious block of Merlot and Cabernet Franc, with a view to emulating the sublime excellence of the great Crus from St Emilion. Crafted from the fruit of the original estate plantings, treated to the luxury of a completely new Dargaud et Jaeglé oak barrique, a mere twenty dozen bottles are made each year.

Excellent Langtons Classification. Whilst the cepage of fruit to Amelia may be different each year, a backbone of two thirds Cabernet Sauvignon dominates, a third of Merlot and Cabernet Franc ensues, followed by a soupçon Petit Verdot. Favouring the slow ripening of a long growing season, Petit Verdot grapes are always last to be harvested, usually in mid April. It is the the quietly spoken measure of of Petit Verdot which contributes structure, fine firm tannins and good natural acidity, fully approachable while young, she will age beautifully for more than fifteen years.

The De Bortoli team can rely on an almost inexhasustible harvest of the finest Pinot Noir from Yarra Valley vineyards which have been husbanded for decades to yield the finest fruit. They host the most splendid vines in Tarrawarra and Dixons Creek, to contribute a backbone of fruit for vinification alongside parcels of Pinot Meunier from a choice site at Hoddles Creek. Hand picked, whole bunches, wild yeast ferments and a course in seasoned oak, its bright cherry redolence and persimmon pinosity rolls over a robe of gentle tannins and crunchy red apple juiciness.

Roundstone vineyard is a beautiful north facing vineyard at Steels Creek, established 1998 on the western slopes of Yarra Valley. Gamay is the great grape of Beaujolais, a lightly structured wine of virile perfumes that's delicious while young. A balance of whole bunch and destemmed fruit is treated to a course of plunging and pumpovers followed by eight months maturation in seasoned 500 litres oak butts. Its bright purple hues and stemmy, tart cherry, briar characters make Roundstone a treat alongside salmon carpaccio or your favourite recipe of cold duck.

Pinot Noir is sourced from choice sites in Yarra Valley, including the eminent De Bortoli estate vineyards at Dixons Creek and Tarrawarra. Selective hand picking of grapes and the inclusion of whole bunches, warm temperature fermentations and minimal plunging achieve a velvety Pinot wine with inspiring fruit and graceful tannins. Upon completion, components are treated to a gentle pressing before gravity racking into a selection of seasoned and new fine oak casks for several months maturation.

The ultimate quality of wine is the goal at De Bortoli but sustainable environmental management is non negotiable, clean soils and a holistic old world approach, really do make great Sangiovese. Always the visionaries, they established a block of Sangiovese with cuttings transplanted from the illustrious Brunello vineyards of Tuscany. Sangiovese likes the warmth and vines were sown to a north south axis for optimal exposure to the sun. Bright red fruit bouquets, charcuterie, dried herbs and spice, intense red and dark fruits, bucolic and textural, savoury and deliciously dry.

The first Train Trak vines were planted in the 1990s and nurtured thereafter by the superior viticultural practices of John Evans. The vineyard's name relates to a train track which runs through the property over a quaint trestle bridge. Built in the 1800s, it was an important link to the Yarra Valley and is still a significant landmark traversing the local vineyards and pasture. Parcels of intensely ripe hand picked, estate grown Yarra Glen grapes are crafted into an exceptionally balanced Cabernet wine with well integrated French oak and fine, drying tannins.

An immensely satisfying Pinot Noir in terms of quality, with a well rounded palate and distinctive varietal expression. The natural advantage afforded by the Adelaide Hills is the altitude, which provides cooler growing conditions throughout summer, a greater day/night temperature differential for acid retention in the grapes and a fully focused, intensity of fruit. It should be noted that the Yarra Valley parcel was entirely processed in the Yarra Valley due to phylloxera restrictions, under the watchful eye of the Taylor winemaking team.
